SOTOVELO is an innovative white wine made from Palomino grapes, produced in the Pago Balbaina in the Jerez area.

Using the process traditionally used to make fino or manzanilla, we age our wine for 8 months under a veil of flor (a thin layer of yeast) in chestnut bocoyes. It thus acquires notes of almond and toasted bread along with saline and mineral nuances, combined with the freshness of citrus, green apple and nectarine, typical of the Palomino variety.

A complex wine that combines freshness with an umami / saline profile; ideal with Iberian acorn-fed ham, cured cheeses, almadraba tuna, preserves such as anchovies and Cantabrian anchovies or simply with olives.

Our Uniqueness – Enhancing The Wine Beneath The Veil Of Flor

The development of the veil of flor is a distinctive characteristic of Jerez sherry wines. Originally limited to the production of fino and other sherry, Sotovelo is pioneering its usage in a white wine. Our commitment is to explore the boundaries of this exceptional and artisanal natural process into new areas and for different occasions such as still wines.


Terroir

This part of Andalusia is characterised by the magnificent white albariza soils specific to the Jerez region, the extraordinary adaptation of the palomino grape to these soil and climatic characteristics, and the optimal humidity and temperature conditions prevalent within the local cellars.

Together, these factors determine the particular type of flor that develops in each wine and greatly influence its taste.
